Instructions
Pre-heat your pan. Once your pan is hot, spray lightly with olive oil.
Then add your leftover sausage and peppers and cook for 1-2 minutes.
Next, crack 3-5 eggs over the sausage and peppers. Put a lid on your pan and cook for 5 minutes or until the egg whites are cooked but the yolk is still runny. Then serve one portion for each egg and garnish with some fresh grated parmesan.
Notes
You can also add additional vegetables like diced sweet potatoes, mushrooms, or broccoli.
