This Instant Pot sausage and peppers recipe is easy, quick, and versatile. I use this recipe to make a variety of other dishes and freeze left overs to use for various breakfast, lunch, and dinner recipes throughout the month.
First cut your peppers in half and remove the seeds. Slice your peppers and onions into 1 inch slices. Next take your sausages and poke 4 small slits with a knife or poke a few holes with a fork.
Then add 1 cup of water and pressure cook on high for 10 minutes. Once finished, slow release for 10-15 minutes.
Remove your sausages from the pot and place on a cutting board or dish. Pour out the water in your pot and turn your Instant Pot onto the saute mode on "normal". The flames will come on to show its pre-heating.
Give your pot a light spray of olive oil and add your sausages back into the pot. Saute your sausage on each side for about a minute until they are a nice golden brown.
Next, add your peppers and onions with a dash of salt and pepper. Saute for about 5 minutes so your peppers and onions have a nice browning on the edges, but are not too soft or mushy. Then remove your peppers and onions to the plate with your sausage.
