These strawberry brownies are moist, buttery, vibrant, and so delicious! They are incredibly easy to make and are perfect for brunch, easter, mothers day, or any get together!
Preheat the oven to 350F. Then, line a 9''x13'' brownie baking pan with parchment paper and set it aside.
Next, beat the softened butter with sugar until it is light and fluffy.

In a food processor or blender, puree frozen strawberries until they are nice and smooth. Fold the strawberry puree into the butter mixture and mix to combine. It is ok if the butter has lumps.

Then, add one egg at a time, mixing well after each addition. Don't worry about the curdled look; it will work well afterward!

Add one small drop of food coloring at a time until you get the desired look. After baking, it will look paler, so aim for a vibrant pink to get a lovely light pink in the end. Alternatively, you can also slowly add beet powder.

Next, mix the flour and baking powder in a separate bowl. Then, combine it with the other ingredients. The result will be a stiff brownie batter.
2 cups all purpose flour, 1/2 tsp baking powder
Pour your batter into the prepared baking pan, and extend it evenly. Bake it for 25-28 minutes, or until an inserted toothpick comes out clean.
Once out of the oven, let the brownie cool to room temperature.
Glaze
While your brownies are cooling, you can start the glaze. First, mix the powdered sugar, milk, and vanilla extract in a bowl until well combined. Start with 2 tbsp of milk, check the consistency, and then add the third tablespoon if you like a thinner glaze.
With the brownie cooled, pour the prepared glaze on top, and extend it evenly.
Before unmolding and slicing, wait for the glaze to harden. You can speed things up by placing them in the fridge for 20 minutes. Room temperature will take a little bit longer.
Once the glaze has hardened, unmold this brownie by lifting it by the paper tips. Then slice, top with a slice of fresh strawberry, and enjoy!!
Notes
For fudgier brownies, bake slightly less for 23-25 minutes. For moist but more spongy brownies, bake for 25-28 minutes. I baked my own for 26 minutes.
