Easy Low Calorie Chicken Tortilla Soup with Rotisserie Chicken
This chicken tortilla soup is incredibly healthy, low calorie, and easy. In just 10 minutes you can have a delicious ready to eat or freeze for meal planning.
2cupsshredded chickenabout half a rotisserie chicken
16ozchicken broth1 container
⅓cupsweet onionsdiced
⅓cupred peppersdiced
14.5ozdiced tomatoesfire roasted, 1 can
15ozblack beans1 can
7ozsweet cornhalf a can
1tbspchili powder
1tspsaltpink himalayan
½tspblack pepper
¼tspolive oilor avocado oil

5tbspcotija cheese

Instructions
First set your stove to medium heat or an Instant Pot to saute mode on medium heat
Once your pot is warm, spray with olive or avocado oil. Then add your diced onions and red peppers. Saute on medium heat for 2 minutes.
Next add your can of fire-roasted tomatoes and stir. Then add your shredded chicken and seasonings. Give everything a good stir and then add your corn and black beans.
Finally, add your chicken broth and bring to a light simmer. Once your soup is hot it is ready to enjoy.
garnish with 1tbsp cojita cheese, fresh cilantro, a lime wedge, 2-3 slices of avocado, and 1 tbsp crispy tortilla strips.
