Mix chopped vegetables, olive oil, and 1 tsp salt into a bowl. Then, mix until everything is well-coated.
Preheat the Air Fryer to 350°F. Then, add the mixed vegetables and cook for 10 minutes. Shake the basket after the first six minutes of cooking for an even roast.
Mix chopped chicken with fajita seasoning, ½ tsp of salt, and 1 tsp of olive oil. Toss to coat.
Add the chicken to the Air Fryer and cook for 10 more minutes. Shake halfway through.
Warm your tortillas and serve with lime juice, chopped cilantro, and your favorite fajita toppings.

For even more flavor, consider marinating the chicken strips in the fajita seasoning, salt, and olive oil for at least 30 minutes before cooking. This allows the flavors to penetrate chicken meat.
