Ingredients
To make these air fryer chicken fajitas you’ll need is a few simple ingredients. For this recipe, we use boneless skinless chicken thighs, red and green peppers, yellow onions, fajita seasoning, salt, and pepper.
I also added a Chipotle Pepper for some extra flavor and spice. You can find these canned in the Mexican grocery aisle. Chipotle Peppers are jalapeño chiles that have been dried, smoked, and then packed in a flavorful adobo sauce made of tangy tomatoes and spices. These are awesome to keep in your pantry if you enjoy Mexican food.
Can You Use Chicken Breast?
You can always use chicken breast instead of chicken thighs, however, chicken thighs do have better flavor and will stay juicier. Chicken breasts can tend to get too dry.
Pro-Tip
If you have additional time and want even more flavor, consider marinating your chicken for 30 minutes in all the spices and seasoning before throwing them in the air fryer.
Instructions
1. Mix chopped vegetables, olive oil, and 1 tsp salt into a bowl. Then, mix until everything is well-coated.
2. Preheat the Air Fryer to 350°F. Then, add the mixed vegetables and cook for 10 minutes. Shake the basket after the first six minutes of cooking for an even roast.
3. Mix chopped chicken with fajita seasoning, ½ tsp of salt, and 1 tsp of olive oil. Toss to coat.
4. Add the chicken to the Air Fryer and cook for 10 more minutes. Shake halfway through.
5. Warm your tortillas and serve with lime juice, chopped cilantro, and your favorite fajita toppings.
Serving Suggestions
This recipe makes 8 servings with flour or corn tortillas. My favorite tortillas are the Mission Low-Carb Tortillas which have only 4g net carbs, 70 calories, and a whopping 15g of fiber. These tortillas are so soft and tasty, you would never think they were good for you. If you are gluten-free you can also use corn tortillas.
For sides, I recommend cilantro lime rice which is incredibly easy to make, Spanish rice, refried beans, or black beans. You can also enjoy these fajitas with a nice Mexican salad.
