This Ninja Creami Green Tea Ice Cream tastes just like you would get at your favorite Asian restaurant. It’s creamy, full of flavor, and high in antioxidants, as well as low in calories and high in protein for the perfect guilt-free indulgent treat.
Flavoring
The primary flavoring for this green tea Ninja Creami ice cream is pure Matcha Powder. You do not have to use the most expensive matcha you can find, as prices can vary wildly. The Matcha Powder I used from Amazon was only $7.00.
I also use a vanilla Atkins protein shake and vanilla bean paste, which adds a very subtle vanilla flavor to the ice cream.
Stabilizers
All Ninja Creami ice creams need ingredients to stabilize the mixture and make it nice and creamy (not icy). This is especially true if you are using low-fat ingredients. For this green tea ice cream, the vanilla protein shake, cottage cheese, and optional collagen all work as stabilizers, creating a creamy, firm ice cream.
Tips & Tricks
- After doing for first spin on the ice cream setting, it is completely normal for the ice cream to look powdery, like in the picture shown above on the left side. All you need to do is add 1 tablespoon more of your protein shake or even regular milk, and hit the re-spin button. After the re-spin, it will look like the photo to the right.
- Add any additional sweetener when you go to do the re-spin.
- In order to achieve a true green tea ice cream like what is served in most Asian restaurants, be sure to use Matcha, not green tea like what is steeped in bags.
- To adapt a standard Ninja Creami recipe (16 oz pint) for the Deluxe model (24 oz tub), you should increase the recipe by 1.5 times.
Sweetener
This Ninja Creami green tea ice cream is very slightly sweet from the protein shake and monk fruit sweetener. However, due to the bitterness of the matcha, you will want to add extra agave. I add the agave after the first spin before I go to do the re-spin. This will create a sweet ice cream without needing to add so much extra sugar. You can also add monk fruit instead, but I find that using a little agave and monk fruit together creates the best flavor with no artificial aftertaste.
Benefits of Matcha
Matcha is a fabulous ingredient to use for your Ninja Creami ice cream as it is very flavorful. Matcha is a finely ground powder made from young green tea leaves. It is incredibly high in antioxidants. It also contains caffeine, so you may want to limit the amount of ice cream you are eating in the evening.
Substitutions
- You can make this recipe using any type of sweetener; these are just my preferences to get the most natural flavor while keeping the ice cream low-calorie. I am not a fan of the aftertaste left by most sugar alternatives.
- If you prefer to use only clean ingredients, you can opt for whole milk instead of a protein shake (Fairlife Milk will yield the same amount of protein). You will likely then need to add more sweetener, which I recommend doing during your mix-in to keep the calories and sugar content as low as possible.
- Feel free to use any pre-made vanilla protein shake you’d like; Atkins is just my personal preference because I find it doesn’t have a sugar alternative aftertaste.
- To make this recipe completely vegan, substitute the milk and cottage cheese for 2 cups of canned reduced-fat coconut milk and omit the collagen.
