Flavoring

To keep this recipe low calorie and full of protein, I use a Dark Royal Chocolate Atkins Protein shake. The Atkins shakes have zero sugar, a creamy texture, but no strange aftertaste. You can also use a Premiere chocolate shake, Boost, or any pre-made protein shake you prefer, but make sure it is Dark Chocolate.

Pro Tip: The biggest complaint people have when trying to make chocolate ice cream is that the flavors are not rich enough. Since freezing the ice cream mutes the flavors, make sure you are using a DARK CHOCOLATE protein shake.

Then, I use both Chocolate Fudge pudding mix and Hershey’s Cocoa powder to make the flavor nice and rich. I prefer regular pudding mix, but if you do not mind the aftertaste, you can also use sugar-free pudding mix. I do, however, prefer the chocolate fudge flavor, which is richer.

Stabilizers

All Ninja Creami ice creams need ingredients to stabilize the mixture and make it nice and creamy. This is especially true if you are using low-fat ingredients. To make this ice cream nice and creamy, I add cottage cheese. You can use low-fat or full-fat cottage cheese. Once blended, this gives the ice cream a wonderful creamy texture and adds a flavor similar to cheesecake. It’s also low calorie and adds a whopping 14g of protein to the ice cream!

The second ingredient I love to add is a simple, flavorless collagen. I add this because it also makes the ice cream creamy, prevents ice crystals, and, best of all, has hair and skin benefits. One scoop also adds 5g of additional protein, so it’s a win-win.

Sweetener

I use Monk Fruit and natural sweeteners. I find that when you mix monk fruit with an agave or honey, it leaves no aftertaste. In this recipe, since we are adding the chocolate pudding mix, we only need to add a small amount of monk fruit to achieve the perfect sweetness.

Alternatives

  • You can use any pre-made chocolate protein shake or even full-fat chocolate milk
  • If you do not have monk fruit sweetener, just add your preferred sweetener.

Tips & Tricks

  • My biggest tip is to not add any additional sugar to your mix until after you do your first spin on the ice cream setting. Once you freeze your mix, it will mute the sweetness, and you will have to add a ton of sweetener. However, if you wait until you do the first spin, then add slightly more sweetener, and do a respin, you will add significantly less. This is especially useful for those who do not like the taste of alternative sweeteners, but don’t want to add a ton of sugar and calories to their ice cream.
  • Your mixture will likely be powdery after the first spin. Just add 1 tbsp of your chocolate protein shake and respin.

Instructions

  • Add all the ingredients to a blender and blend until smooth.
  • Pour into your Ninja Creami pint and freeze for 24 hours.
  • Mix on the ice cream setting.
  • Once finished it will likely be a powdery texture. Give it a little taste and if it's not sweet enough, add more sweetener along with a tablespoon of your chocolate protein shake and "re-spin"

Notes

  • You can use an premixed protein shake you’d like
  • wait until the re-spin to add any extra sweetener. You will use much less this way.
  • if the ice cream is powdery, do not worry. Just add 1 tbsp of your chocolate protein shake and respin.
  • I recomend using chocolate fudge pudding mix because it adds a richer flavor.
