This Cookie Butter Ninja Creami ice cream is one of my favorite flavors. It’s creamy, low in calories, high in protein, and delicious.
Stabilizers
For this recipe, I wanted to keep the calories as low as possible, so instead of using a protein shake, I am using 2% fairlife milk with cottage cheese and just a small amount of guar gum. I also add flavorless collagen. This is completely optional, but I always try to sneak collagen into my food for its skin benefits, and it also adds a creamy texture to the ice cream.
Flavorings
I had to experiment quite a bit to get the perfect flavor for this Cookie Butter Ninja Creami ice cream. My best combination was using a cookie butter syrup with vanilla extract and cake batter extract. Since the cookie butter syrup has less sugar than honey or agave, it was a better choice for adding sweetness while still keeping the calories fairly low.
I also love using various extracts to add flavor while not adding extra calories. Additionally, when you mix in your cookies, it will also add flavor to the ice cream. Feel free to use Biscoff, Lotus, or Trader Joe’s Speculoos cookies.
Sweetener
I use Monk Fruit and natural sweeteners. I find that when you mix monk fruit with an agave or honey, it leaves no aftertaste. In this recipe, since we are adding the cookie butter syrup, we only needed to add a small amount of monk fruit to achieve the perfect sweetness.
Alternatives
- You can use non-dairy milk instead of 2%
- If you do not have monk fruit sweetener, just add your preferred sweetener. I recommend tasting the mix and adding a sweetener, a teaspoon at a time, until it’s just a tad too sweet. If I taste my mix and it’s perfect, I add 1- 2 tsp more of my sweetener. This is because the sweetness is muted once it’s frozen.
All of my Ninja Creami recipes are designed for maximize flavor while still being low in calories and high in protein. I try to find a happy medium and experiment with different ingredients to find the best of both worlds.

Cookie Butter Ninja Creami Ice Cream
EQUIPMENT
Ingredients
- .75 cup low fat milk Fairlife
- ยฝ cup cottage cheese low fat
- 1 tbsp monk fruit sweetener
- 6 grams collagen Flavorless
- 2 tbsp cookie butter syrup
- ยฝ tsp vanilla bean extract
- ยผ tsp cake batter extract
- 4 whole Biscoff cookies
Instructions
- Add everything to a blender or magic bullet, except for the Biscoff cookies.
- Blend until smooth and place in the freezer with the lid off for 24 hours.
- Add the mix to your Ninja Creami and use the Ice Cream setting.
- Open a hole in the center of your ice cream and add 4 Biscoff cookies. Then hit the Mix-In button.
Notes
- Collagen is optional, but gives extra protein and a creamier texture
- You can substitute your preferred milk and sweetener
- If, after the first spin, you find the ice cream is not sweet enough, you can add a small amount of sweetener during the mix-in phase.
- If after the first spin, the ice cream is powdery, add 1 tbsp milk and hit re-spin.
