Ninja Creami Sweet Potato Ice Cream

If you love sweet potato pie or sweet potato casserole, you’ll love this Ninja Creami Sweet Potato ice cream. This recipe features fresh roasted sweet potatoes, hints of warm spices, and fluffy marshmallow flavor with a smooth creamy texture.

Flavoring

This sweet potato ice cream was inspired by my awesome sweet potato pie recipe and uses a lot of the same ingredients. To really bring out the flavor and sweetness of the sweet potatoes, I roast them in the oven for 45 minutes until the caramelized sugar begins to pour out of the tiny puncture holes.

I also use a traditional pumpkin pie spice blend, vanilla bean paste, and just a touch of marshmallow fluff.

Pro Tip: Marshmallow fluff is only 45 calories for 2 tablespoons and makes a great topping when mixed with a little milk!

Stabilizers

All Ninja Creami ice creams need ingredients to stabilize the mixture and make it nice and creamy (not icy). This is especially true if you are using low-fat ingredients. This ice cream, however, is naturally creamy from the sweet potatoes, so there is no need to add anything extra besides some low-fat milk.

Sweetener

This Ninja Creami sweet potato ice cream is unique as I use two whole dates and re-spin with a little molasses to really bring out that sweet potato pie flavor. Molasses is the secret ingredient in my sweet potato pie. I also add monk fruit sweetener to reduce the amount of sugar and calories.

Alternatives

  • You can make this recipe using any type of sweetener.
  • If you do not have fresh sweet potatoes, you can use canned yams. They are naturally in syrup so you do not need at add extra sugar or monk fruit.

Tips & Tricks

  • My biggest tip is to add the molasses during your re-spin. This will significantly reduce the amount of sugar needed in the recipe and will keep the flavors nice and rich.
  • Your mixture will likely be powdery after the first spin. Just add 1 tbsp of your milk and respin.

EQUIPMENT

Ingredients
  

Marshmallow Topping

  • 1 tbsp marshmallow fluff
  • 1 tbsp low fat milk

Instructions
 

  • Add all of the ingredients to a blender. Pour into your Ninja Creami container and place in the freezer for 24 hours without the lid.
  • Blend on the ice cream setting. Once finished, add molasses and re-spin. If the ice cream is powdery, also add 1 tbsp of milk.

Marshmallow Topping

  • Using a small coffee frother, mix 1 tbsp of marshmallow fluff with 1 tbsp of milk. Pour over your ice cream and enjoy.

Notes

  • You can use canned yams and omit the sweeteners
  • If your ice cream is powdery after the first spin, simply add 1 tbsp of milk and re-spin.
  • I prefer to add the molasses during the re-spin as it keeps the flavor richer and you will not need to add as much sweetener.
