It seems that strawberry brownies are trending on tiktok, but I have the recipe for real homemade strawberry brownies from scratch! Sure the boxed version might be easy, but they will never be as good and you will be surprised how simple it is to make these strawberry brownies from scratch.

Should I Use Fresh or Frozen Strawberries?

Belie e it or not, your brownies will actually benefit from using frozen strawberries. In fact, you want to keep them frozen when you puree them. This helps to keep your batter from becoming too runny. I do add a few fresh strawberry slices as a garnish which is really beautiful.

How to make pink brownies

Making these brownies pink is the same technique for making red velvet cake red. You are just going to slowly add red food coloring until your brownies are a deep shade of pink (not red). The color will lighten a bit as it bakes, so you want to stop once you’ve reached a deep pink.

Alternatively, if you did not want to use food coloring, you could slowly add beet powder. Make sure to use a good quality beet powder so it blends well.

Equipment

For this recipe, you will need a food processor or blender to make your strawberries nice and smooth like a puree.

How to make easy strawberry brownies from scratch

Start your strawberry brownies by preheating the oven to 350F. Then, line a 9”x13” brownie baking pan with parchment paper and set it aside.

Next, beat the softened butter with sugar until it is light and fluffy. In a food processor or blender, puree frozen strawberries until they are nice and smooth. Fold the strawberry puree into the butter mixture and mix to combine. It is ok if the butter has lumps. 

Then, add one egg at a time, mixing well after each addition. Don’t worry about the curdled look; it will work well afterward!

Now it’s time to color our brownies. Food coloring can be extremely powerful, so add one small drop at a time until you get the desired look. After baking, it will look paler, so aim for a vibrant pink to get a lovely light pink in the end. Alternatively, you can also slowly add beet powder.

Next, mix the flour and baking powder in a separate bowl. Then, combine it with the other ingredients. The result will be a stiff brownie batter.

Pour your batter into the prepared baking pan, and extend it evenly. Bake it for 25-28 minutes, or until an inserted toothpick comes out clean. For fudgier brownies, bake slightly less for 23-25 minutes. For moist but more spongy brownies, bake for 25-28 minutes. I baked my own for 26 minutes.

Once out of the oven, let the brownie cool to room temperature.

Glaze Instructions

While your brownies are cooling, you can start the glaze. First, mix the powdered sugar, milk, and vanilla extract in a bowl until well combined. Start with 2 tbsp of milk, check the consistency, and then add the third tablespoon if you like a thinner glaze.

If you want to make a strawberry glaze, you can add 1-2 tablespoons of strawberry jam.

With the brownie cooled, pour the prepared glaze on top, and extend it evenly. 

Before unmolding and slicing, wait for the glaze to harden. You can speed things up by placing them in the fridge for 20 minutes. Room temperature will take a little bit longer.

Once the glaze has hardened, unmold this brownie by lifting it by the paper tips. Then slice, top with a slice of fresh strawberry, and enjoy!!

Important Tips and Notes

  • When making these strawberry brownies, and most baked goods, you want to make sure your ingredients are at room temperature. Be sure to take out your eggs, and butter so they defrost, soften, and become room temperature.
  • Keep your strawberries frozen when you puree them.
  • substitute food coloring with beet powder
  • adjust the thickness of your glaze by using less or more milk
  • cooking slightly less for fudgier brownies

Storage

Leftovers can be stored in a sealed container in the fridge for 5 days or on the counter for 1-2 days.
