Cheese Foam has become a popular topping for coffee, cold brews, and boba drinks. It is even the key ingredient in the popular Black Caf Cold Brew at Disneyland. If you have never tried cheese foam on your coffee before, it is incredibly delicious, creamy, and fluffy. Just imagine topping your coffee with a super light and fluffy dollop of cheesecake. Sounds pretty tasty right?
Most people do not realize that cheese foam is incredibly easy to make at home with only 3 ingredients. It can even be made keto friendly. I learned to perfect this foam when I was desperately trying to recreate my absolutely favorite drink at Disneyland, the Black Caf Cold Brew found at Galaxy’s Edge.
What type of cheese do I use?
The most common cheese I’ve seen people suggest is mascarpone. I think they think it just sounds fancier, but the truth is, mascarpone cheese is too heavy. The idea is you want the foam to be very light and fluffy so it sits on top of the coffee without sinking.
To make this type of foam, you want to use Whipped Cream Cheese. This is going to give you a very light consistency that is still thick and creamy.
Best types of sweetener
For this recipe, you can use regular sugar, powdered sugar, monk fruit sweetener, liquid sweetener, or allulose. I little tip if you are not fond of article sweeteners, is to use normal sugar with allulose. If you decide to do this you do not need to use as much. Instead, you would add 3 teaspoons of allulose and 1 teaspoon of regular granulated sugar. It will be completely undetectable and will taste as if you used all sugar.
How do I make Cheese Foam for Coffee?
Now that you have the whipped cream cheese, all you need is half & half with sugar. I recommend using powdered sugar which blends better with cold liquids. Simply add your whipped cream cheese, powdered sugar, and half & half to a small measuring cup and blend using a hand milk frother.
How do I make Keto Cheese Foam?
In order to make keto cheese foam, you will swap out the powdered sugar for monk fruit sweetener or allulose. If you do this you only need to add 4 teaspoons of your preferred sweetener. You can also use 3 teaspoons sweetener to 1 teaspoon sugar.
Popular Uses for Cheese Foam
Cheese Foam is a very popular topping for both coffee and tea, especially Boba drinks. If you’ve never had Boba, they are like round flavorless gummy bear balls made out of tapioca. They are very popular to add in many Asian sweet tea drinks.
As mentioned earlier, this foam is also the topping in one of my favorite Disneyland drinks, the Black Caf Cold Brew found at Galaxy’s Edge. This drink features sweet cream cheese foam and is then topped with cocoa puffs.

How to modify this recipe for more foam
This recipe can also be modified. If you want more of a foam and less cheese, simply reduce the cheese to 1/4 cup and replace the half and half with 1% milk. This will create a more foamy topping which you can see pictured above. Regular 2%, 1%, and skim milk will produce a nice foam.

- ½ cup whipped cream cheese
- 4 tbsp half and half
- 3 tbsp monk fruit sweetener powdered or liquid, or regular powdered sugar

- add all ingredients to a small measuring cup and whisk for 1-2 minutes with a handheld milk frother½ cup whipped cream cheese, 4 tbsp half and half, 3 tbsp monk fruit sweetener

- This cheese cream can be used with cold, iced, or hot coffee, tea, or cold brew.
- For a foamier topping, switch out the half & half for 1% milk and add 1/4 cup whipped cream cheese
