This flavorful breakfast sausage and peppers skillet can be easily prepared using the leftovers from our Instant Pot or baked sausage and peppers recipe. Meal planning has become an important monthly routine to help me stay in shape and maintain my weight. Sausage and Peppers is a recipe I make regularly and then incorporate in a variety of different dishes. I simply slice them up and freeze them in portions to use for different meals throughout the month.

When I need a quick breakfast, I defrost some sausage and peppers the night before and make this super easy breakfast sausage and peppers skillet. The entire meal is effortless and ready in less than 10 minutes!

How to Make a Breakfast Sausage and Peppers Skillet

First, you want to take out and defrost 2 portions of sausage and peppers which equals 2 sausages sliced and 1 cup of peppers and onions diced. 

Then in a preheated pan, you’ll add a light spray of olive oil. Let the oil heat up for a few seconds and add your sausage and peppers. Saute them for about 2 minutes and then crack 3-5 eggs on top. I like to serve an egg for each person. 

Next, cover your pan and let cool for about 5 minutes until the egg whites are cooked but the yolk is still runny. That is it, now you have a super easy breakfast skillet in under 10 minutes. I also like to garnish each serving with a sprinkle of fresh parmesan.

Best Type of Sausage To Use

I personally really love using sweet Italian sausage for my recipe. However, if you like your cuisine on the spicier side, don’t hesitate to use hot Italian Sausage. You can even use alternative types of sausage like andouille or kielbasa.

Optional Ingredients

If you want to make this dish even more filling you can also add some diced regular or sweet potatoes. I’ll sometimes even add extra veggies I have on hand such as mushrooms, diced tomatoes, or broccoli.

Ingredients
  

  • 1 tsp olive oil
  • 2 cups sausage and peppers 2 servings left over from our sausage and peppers recipe
  • 4 eggs
  • ¼ cup parmesan cheese grated

Instructions
 

  • Pre-heat your pan. Once your pan is hot, spray lightly with olive oil.
  • Then add your leftover sausage and peppers and cook for 1-2 minutes.
  • Next, crack 3-5 eggs over the sausage and peppers. Put a lid on your pan and cook for 5 minutes or until the egg whites are cooked but the yolk is still runny. Then serve one portion for each egg and garnish with some fresh grated parmesan.

Notes

You can also add additional vegetables like diced sweet potatoes, mushrooms, or broccoli.
